Red Lentil Soup


2 cups red lentils

1 carrot, peeled and shredded

1 potato, shredded

1 yellow onion, small

red bell pepper, diced

cup oil

2 tablespoons flour

1 tablespoon tomato paste or red pepper paste

4 cups water

1 teaspoons red pepper flakes

1 teaspoons mint, fresh

3 teaspoons salt


Thoroughly wash the red lentils. In a pressure cooker, mix the oil and flour. Once mixed well, add the tomato paste (or red pepper paste), lentils and water. Stir until mixed well.

Add the carrot, potato, onion and red bell pepper. Stir, then add the red pepper flakes, mint and salt. Once everything is well-blended, place the lid on the pressure cooker and cook for 10 minutes. If you dont have a pressure cooker, you can use a regular pot; the soup will take about 20-25 minutes to cook.

If you like your soup smooth, you can take the cooked ingredients blend them with a hand blender. But usually, this soup is blended well enough and the lentils are mushy enough that you dont have to do this.

Serve the soup with a wedge of lemon, which can be used to squirt on top. A variation is to also add a sauce to drizzle on top: 2 tablespoons of butter and 1 tablespoon of sweet or spicy paprika. Melt the butter in a skillet, add the paprika and stir. Drizzle the sauce on top of a bowl of soup.
