Durango debuts a recipe book from local chefs

The Durango Herald Small Press has come out with its’ first recipe book: Delightfully Durango.

The book features recipes from local restaurants and 25 percent of the proceeds goes to The Women’s Resource Center in Durango.

Do you go to Zia Taqueria for your enchilada craving? Well now you can make it at home. That is just one of the recipes the book contains. There are appetizers, soups and salads, drinks and wines, entrees and desserts, along with bio’s of your favorite chefs.

Here’s a recipe from the book to give you a taste:

Tequila Shrimp from Francisco’s Restaurant

Ingredients

4 extra large shrimp, cleaned

1 Tbsp. oil

1/2 teas. minced garlic

1/2 teas. minced shallot

1/2 cup heavy cream

2 Tbsp. tequila

large pinch of minced cilantro

1/2 lime, juiced

Butterfly the 4 extra large shrimp.

Heat oil in a large skillet and cook the shrimp for 2-3 minutes, until bright pink, then turn. Cook the shrimp another 2 minutes on the other side, then add minced garlic and shallots and sauté until fragrant. Add tequila (careful for flame!), reduce by two thirds, and then add heavy cream, one large pinch of minced cilantro and the lime juice.

Cook until cream reduces, and it is bubbling in the middle of the pan.

Serve garnished with avocado and more minced cilantro.
