While we’re all waiting for the abundance of summer, the grocery store is stocked with citrus from the last gasp of winter growing regions. Here’s a sweet and tangy salad to use up the bounty of now.
Aunt Jane’s Ambrosia
1 ruby red grapefruit, peeled and sectioned
2 navel oranges (Cara Cara are especially good), peeled and sectioned
1 banana, peeled and sliced in half and then chopped
¼ cup dates, seeded and chopped
½ cup sweetened shredded coconut
½ cup toasted pecan halves
Assemble the salad as close to serving time as you can, leaving the pecans to place on top (so they won’t lose their toasty crunch). Serves 4.
