Deep thoughts on salt

Did you know salt is the only rock we eat? Or that nearby Redmond, Utah, is the source of what is considered one of the tastiest and purest salts around? These and many other interesting tidbits are what you stand to learn if you take Mary Meredith’s Fort Lewis College Continuing Education course, “The Rock that Rocks the World.” The class explores how salt shaped history. While we think of salt primarily as a flavor enhancer in food, it also has many other uses, including in food preservation, agriculture and industry.
