Pumpkin or squash?

It’s pumpkin time and that can be confusing – what’s the difference between a pumpkin and a winter squash? Do they all taste the same?

While pumpkins are the largest of the winter squash family, a taste test will show you the differences. I tried a pie pumpkin, a light green Jahrdale squash and a deep green Marina squash. Each had unique tastes and textures.

The pumpkin was sweeter by far than the squash and landed in between the two in texture, not nearly as stiff as the Marina nor as loose as the Jahrdale. The Marina had an unusual savory flavor, almost like chestnuts, while the Jahrdale was delicate and fragrant.

Each one was particularly suited to a certain culinary function. The pie pumpkin was perfect for its named purpose, making a sweet and smooth pie. The Marina was best in soups because of its strong texture and flavor. And the Jahrdale was excellent for baking, making a light muffin and excellent cake.

It’s pumpkin time – experiment!
