A substitution guide for bakers

One of the most useful pages in the Betty Crocker cookbooks isn’t a recipe at all, it’s a conversion chart for things you need – say baking powder – but don’t have on hand.

Titled “Substitutions that are safe,” it details equivalent measures and shows you how to concoct the missing ingredient. For example:

1 cup sifted all-purpose flour equals 1 cup plus 2 tablespoons cake flour

1 tablespoon cornstarch equals 2 tablespoons of flour

1 teaspoon baking powder equals ¼ teaspoon baking soda plus ½ teaspoon cream of tartar

1 cup fresh milk equals ½ cup evaporated milk plus ½ cup water

1 cup buttermilk equals 7/8 cup milk plus 2 tablespoons vinegar

1 square unsweetened chocolate equals 4 tablespoons cocoa powder plus 1 tablespoon vegetable oil

When it comes to baking, Betty Crocker will get you through in a pinch.
