The question Whats for lunch? at St. Columba Catholic School can be answered with two words: Something healthy.
The U.S. Department of Agriculture has given the school its Healthier U.S. School Challenge Silver Award, complete with a $1,000 prize and banner.
Guidelines for the award include serving five different types of fruit and five different types of colored vegetables each week and offering a minimum of 45 minutes of physical education weekly.
Much of the credit goes to Scott Arbaugh, the schools food service director, who has transformed meal preparation from processed foods to 80 percent of menu items made from scratch.
Were putting the seeds in students heads that eating right is a lifetime thing, and it will keep them healthier throughout their lives, he said. They are really starting to enjoy the healthier foods and are learning that foods dont have to be salty or sweet to be good.
