One of the few restaurants in Three Springs, Digs Restaurant and Bar, seems to have closed its doors.
Digs, one of the first businesses to open in Three Springs in 2009, has not operated for weeks and its website is no longer active.
The restaurant’s owners, Dallas and Leila Parga, who also own J. Fargo’s in Cortez, did not respond to multiple requests for comment about the business’s closure in recent weeks. The restaurant on Mercado Street has changed ownership a few times since it opened, and most recently was serving American cuisine, such as sandwiches, salads, burgers and steaks.
The restaurant was opened by chefs Todd and Kellie Stevens with a “borderless, free-for-all, mish-mash of a menu,” according to The Durango Herald archives.
Digs’ closure leaves the neighborhood with limited dining options and with opportunities for entrepreneurs to open new eateries in the area, said Jack Llewellyn, executive director of the Durango Chamber of Commerce.
Taco Boy, a Mexican restaurant, and the Upper East Side Coffee Deli are among some of the offerings in the area. But there is likely room for more, especially since Three Springs is a growing residential area and home to Mercy Regional Medical Center, one of the largest employers in the area, Llewellyn said.
He said all those residents and employees are likely “hungry for other dining experiences.”
Homeslice Pizza plans to open a third location in Three Springs, but construction has been postponed, said owner Corey Kitch. The third location was expected to be in a larger mixed-use building with apartments and offices, but those plans are going to be scaled down, he said.
“I am rethinking the project, and I would like to build something smaller,” he said.
In an ideal world, he would like to start construction on the new restaurant this summer, he said.
General interest in commercial space in Three Springs is also growing, said Wells Group Realtor Max Hutcheson.
“What we’re seeing is more demand for retail space,” he said.
