Taco Boy opens in Three Springs

Fast-casual restaurant well received

Taco Boy, a fast-casual restaurant and bar, opened last week in Three Springs.

Silvia and Juan Aguayo started work on the restaurant about a year ago and helped design the new airy space at the corner of Mercado Street and Heritage Lane.

So far, residents and workers in Three Springs have received the restaurant warmly and it’s been busy, said Miguel Aguayo, store manager and Silvia and Juan Aguayo’s son.

“It’s authentic fast Mexican food ... we make everything quick to order. Nothing is premade,” he said.

The restaurant opted not to have table service to better serve workers and families in a hurry.

“They want to eat out somewhere quick,” he said.

The chimichangas and the four mini-tacos plates have been most popular. The menu also includes breakfast burritos served all day, sopes, enchiladas, tamales and seafood dishes, including ceviche. Flan and churros are available for dessert.

On weekends, the restaurant serves menudo, a Mexican soup made with beef stomach; it’s a rarity in town. It sold out on the opening weekend, Silvia said.

The bar serves an avocado margarita, a creamy drink Miguel invented with his co-workers while working as a bartender. The drink menu also features Mexican beers, mixed drinks made with fresh-squeezed juice, rum, whiskey and vodka.

The Aguayos are from Los Angeles. Their cuisine is modeled on Los Robertos, a San Diego restaurant, and inspired by other eateries in California and Arizona, Miguel said.

Juan Aguayo immigrated from Mexico as a teenager and spent his career in food distribution. He still works in that field, but it was always his dream to get into the restaurant business, Silvia said.

The couple owned other restaurants before opening Taco Boy, which is named, in part, after their grandchildren, who love tacos.

Miguel Aguayo first came to Three Springs looking for a house and really liked the community’s events and its projected growth.

“We thought the community needed something other than Digs,” he said.

The restaurant is open from 7 a.m. to 9 p.m. Sunday through Thursday and from 7 a.m. to 10 p.m. Friday and Saturday.

The bar opens at 4:30 p.m., although the time may change based on demand.
