Note: A barbecue grill could substitute for a smoker, but be sure to keep the temperature low.
Ingredients:
Large, firm, whole bulbs of fresh garlic
Olive oil
Method:
Cut tops off garlic and brush off excess outside skin.
Place on sheet pan, drizzle with olive oil and set in smoker.
Load smoker with 1-4 ounces of hickory wood. (It takes very little wood to flavor garlic.)
Smoke at 225 F for 1¾ hours or until soft to the touch.
